My relatives are warning-me-off, listening constantly, to liberal/progressive-media, due to what they term, as my "confirmation-bias", but I HAVE occasionally tuned-into FOX, or Limbaugh, and I simply can't stomach them, for more than 3-minutes . On the other-hand, my relatives haven't taken the time, to find truly liberal programming (since it is too inconvenient for them to find and consume (supposedly)), so I say f**k the "confirmation-bias" -- I am listening to Karel !

The reason 8 oz of flour is different than 8 oz of liquid is they are completely different. A cup is a measure of volume only while ounces are measured by volume and by weight. Measure solids by weight and liquids by volume.

You can measure the weight of 1 cup of flour 3 times and get 3 weights. If you fill a cup then tap it on the countertop, you will create more space at the top by packing the flour down. Then you have less than a cup of flour, so you'll add more flour until the cup is full. The more loosely packed, the more air in the cup (which weighs zero but occupies space). A packed cup of flour will weigh significantly more than a loosely packed cup and neither will weigh the same as a cup of water, which does not weigh the same as a cup of oil or milk.

Therefore when you see a reference to "one cup of flour" it is an approximation. You cannot measure ounces of a solid in a measuring cup for volume of liquid.

You're right - baking is chemistry, and it's all about precise weights and measures.

If only healthcare worked this way... sigh. I am undergoing treatment for a blood disease and have infusions with a large amount of blood drawn (500 units) every other week. I looked it up and discovered "unit" can mean just anout anything. In my case, a unit is 1.25 mg, but others call a unit 1mg. Some call 1 unit 100mg or 500mg. I had to ask the nurse exactly how much was coming out. When she told me, I said thankfully you're not baking a cake!If only healthcare worked this way... sigh.
